In Lithuania we have pancakes that are made with cottage cheese and are sweet and served with jam. Such a great grandma’s treat childhood nostalgia. I had to make a vegan version of it and I must say – it is great and maybe even more nutritious than dairy version of it? Good choice for breakfast!
Tips and insights:
- my banana was very ripe so I didn’t need to add a lot of sugar, so you can add more if you need to
- if you don’t have coconut flour, add a little bit more of wheat flour
- serve with your favourite jam – I enjoyed it with cherry jam
You will need:
- 1 banana
- 180-200g block of firm tofu
- 50g plant milk
- 50g flour
- 30g coconut flour
- 1 tbsp sugar
- 1 tsp baking powder
- a little bit of vanilla
- pinch of salt
- oil for frying
What to do?
- mash banana and tofu as fine as you can (you can use a food processor)
- mix together with the rest of ingredients
- shape pancakes with hand
- heat the oil in a pan on medium heat and fry the pancakes till golden brown
