I came up with this recipe when somehow I had quite a few kiwis accumulated in my fridge.. I will admit – it is not my number 1 fruit to eat on it’s own but I’m always keen to combine fruits with savoury ingredients so that’s how this salsa happened. Grrreat addition to your salad, or on nachos or just eat as it is, yum!
You will need:
1 large red or yellow pepper
1 cup cooked black beans
1 cup sweetcorn
1 red onion
1 lime juice
3 kiwis
2 tbsp EVOO
coriander
salt and pepper
1/2 chilli – optional
What to do?
- first, dice red onion, mix it with lime juice and leave it to soak for half an hour stirring it regularly.
- dice pepper, kiwi, chilli, chop coriander and mix it with the rest of ingredients.
- mix all of the ingredients together, season with salt and pepper to your liking.
