I loove sweet potato but I rarely make anything out of them where I need to boil, mash and mix. I took the risk and here how these awesome pancakes were born! No regrets – will make more! Combined with refreshing sauce it is a great option for your lunch, dinner or next brunch..:)
Tips and insights:
- I prefer steaming potatoes over boiling them
- you can use chickpea flour instead of starch.
- be generous with herbs!
You will need:
- 100g red lentils
- 500g sweet potato
- 70g apple
- 1 small onion (~50g)
- 1 tsp chilli powder
- 1 tsp salt
- 60g starch
- 20g ground flax seeds

- For the sauce:
- 100g unsweetened yoghurt
- 10g parsley
- 10g capers
- lemon zest
- salt and pepper
What to do?
- cook the lentils and steam the potatoes
- mash cooked lentils and potatoes, mix them with chopped onion, grated apple and the rest of ingredients.
- form pancakes and fry them in oil or dry pan until golden.
- I made 12 pancakes out of this recipe

For the sauce:
- mix chopped parsley and capers, lemon zest with yoghurt, add salt and pepper to your taste.
- ideally leave the sauce to sit for a little bit before serving to absorb the flavours.
