If you are British or ever been in Britain over Christmas period, then you know the deal.. Mincemeat is main festive sweet and I have to agree – mincepies are truly yummy. Actual mincemeat back in the old day contained meat, but today in most of the cases it is meat free and easy to veganize. So here I’m sharing with you my version of it so please try making it and I hope you will like it!
You will need:
200g raisins
100g cranberries
100g goji berries
100g golden sultanas
2 apples, peeled and sliced
100g brown sugar
40g coconut oil
50g brandy
1 lemon zest and juice
1 orange zest and juice
1 tbsp ginger
2 tsp cinnamon
1 tsp mixed spice
1/4 tsp nutmeg
What to do?
Cook all ingredients on medium-low heat for 1-2 hours until soft and sticky. If the mix gets too dry, you can add a little bit of water.
