Lithuanian cuisine is all about potatoes, dairy and meat. And dill:D First I thought it is mission impossible to veganize Lithuanian foods but actually it’s fairly easy. And I’m happy to say that potato pie which is my favourite Lithuanian dish is easy to veganize and it can actually become a very versatile dish! So here is my version of Lithuanian potato pie and I can tell you – if you like potatoes, you will not regret making this one!
Tips and insights:
- it is very important what potatoes you use for this dish. Choose the kind that is less watery, like King Edward ones.
- grate the potatoes on the finest side of your grater
- choose any plant milk that you like
- some people like to grate in an onion into the mixture, or fry a diced onion and stir it in
- you can also mix in some panfried vegan mince or chunks
- for the topping you can be really creative but I really recommend incorporating this sour cream
You will need:
- 1kg potatoes (choose less watery)
- 200ml plant milk (I usually use soy)
- 2 tbsp lemon juice
- 2 tsp salt
- 1/2 tsp black pepper
- 1 tbsp nutritional yeast (optional)
- 4 tbsp oil
What to do?
- finely grate the potatoes, mix them with boiling milk and other ingredients and 2 tbsp of oil
- preheat the oven to 180C and bake it for 30min covered, then 30 min uncovered
- after baking 30mins uncovered, brush the top of the bake with remaining 2 tbsp of oil and bake for another 20 mins
- I served it with pan fried onions and porcini mushrooms and some sunflower seed “sour cream”
