Very fresh, tasty, tzatziki inspired sauce can accompany your bakes, pancakes, fritters, or just as a dipping sauce for crisps or chips.. even salad dressing! You name it. Just try it and you’ll see.
You will need:
2 short cucumbers (or 1 long)
3tbsp ground almonds
1tbsp extra virgin olive oil
1tbsp salt
1tbsp tahini
2tbsp nutritional yeast
1tbsp lemon juice (can use apple cider vinegar)
1/4 tsp black pepper
2tbsp dill, chopped
What to do?
- blend all ingredients, apart from dill, in a blender till smooth. Have a little taste – maybe you prefer more salt, pepper or lemon juice?
- add chopped dill, stir well with the sauce.
- enjoy!
