Perfect end of summer way of enjoying fresh produce. Crispy on the outside, soft inside, make sure you make the sauce that goes just too good with these pancakes!
You will need:
1 courgette
5 medium potatoes
1 carrot (and leaves, if there are)
3 tbsp flour
salt and pepper to taste
fresh parsley
oil, for frying
What to do?
- first, grate the courgette and mix it well with 2 tsp of salt, set it aside.
- grate potato and carrot, chop the carrot leaves (if you have any), parsley.
- check on your courgette – it should be quite watery now. Squeeze it well and add it to mixture.
- add the flour, season with salt and pepper to your taste. I personally like these pancakes quite peppery.
- heat the oil in a frying pan and fry the pancakes till golden on both sides
Serve with cucumber-almond sauce.
