This salad is something very simple but yet very balanced and satisfying to eat.. I don’t think I invented something very new as my mom used to make it sometimes but I [obviously] just had to veganize it. Highly recommend trying it, it might become your new favourite!
You will need:
1 broccoli (to a larger size)
30g red onion (or shallot)
50g dried cranberries
80g mayo (here if you want to make your own)
Salt and pepper to taste
What to do?
- Cut the broccoli to bite size pieces, make sure you use stalk too! (Just peel the fibery parts off and use the core)
- Blanch broccoli for 90-120 seconds in salty water and straightaway cool it down in cold water
- Leave broccoli to drain and mix with the rest of ingredient.
